What offensive strategy should be used against a Full Court Press? Patient?

I would recommend using any of the tactics that are at an increased pace, which would be run and gun, look inside, and push the ball. They all tend to work well, it really depends if you have better outside shooters (in this case run and gun would be best) or inside shooters (in this case look inside would be best) or both (in this case any would work, but I would use push the ball) for which one of the tactics to use. I would not use patient because the full court press strategy is at an increased pace, so you need to match that increased pace with your offensive strategy.

Ok so what kind of pace should my defense be? Increased?

It absolutely doesn't matter which tactic you will use. Just take care, that you're not setting up players that don't have any passing or handling-skills.
