According to the training part of the manual, you can change training regimens as many times as you like throughout the week, yet the only one that counts is the that you have up when the training update occurs. so why would you change your regimen once you've set it?

Because things can happen that cause you to want to change it. For instance if one of your players were to suffer an injury in a game, so you wanted to train something else for a few of you other players instead of wasting the week by training a hurt player who didn't get enough minutes. Also, maybe just the simple fact that you changed your mind on the direction you want to train your player/players due to forum help from other managers. The list goes on and on but believe me it is a good thing they give you the option on changing it.

Well if you accidentally clicked the wrong training set-up it would give you the option to change it, also if your players didn't get the right amount of minutes you could shuffle around the trainging plan to optimize the minutes they did get. But as a rule I just keep mine the same until I need a different plan.
