Hey,
I have a question regarding the players who i want to play offense on another position as i want him to play defense.
In M2M we have to option to chose let my PG guard their SF f.ex.

So in a zone let's say a 2-3, if i want my PG to play as one of the 3 guys under the basket can i only switch: let my PG guard their SF?

Yes. It works the same way like with m2m.
