I'd play the 2nd player.

I see Experience as something that helps in making better judgments and decisions. For example, a player with higher experience may pass rather force himself to shoot, because passing will create more chance.
But Game Shape affects the quality of the player's performance. So obviously even if a player has a good Experience, but has a bad Game Shape, his good judgments and decisions will be diluted greatly by his low performance.

So I think that Game shape has more impact on the performance rather than the Experience. And hence the 2nd player :)

experience helps your team pull trough against better teams, or in difficult games.

game shape is just the most important skill on a player for performance.

that's how I experienced it at least.

so to pick a player to play, yes game shape would be the more important factor.
It might make it so the game doesn't get to a difficult stadium.

if you play the lesser shape player, and the game gets hard because he performs less good, then his exp might save the day, but it's better to avoid having a hard game in the first place.

Of course option 2.

In fact, I never experienced any improvement from the experience of the player. How do I know it for sure? I don't, same as someone who would say the otherwise.

Player 2 is the obvious answer. Just out of curiosity, why do you need to present the players' hypothetical skills? It doesn't change anything,,,

Again, how does age make a difference? Players' performance just depends on their skills, experience and gameshape. Not on age, height, hairstyle or skin colour :P. The question is just "Between two players with identical skillsets, do you choose one with GS = x and Exp = y or one with GS = z and Exp = w?"
