The transfer market is still pretty sketchy and player values are rather random, since everything is still new and most players have relatively similar skill levels.

For now, I would recommend winning games and growing your number of season ticket holders, and getting the most out of your arena. The transfer market will look a lot different in a season or two, while you'll have higher-skilled trainees in the meantime.

Does the Number of Season Ticket Holders only update at the beginning of each season?

Is that the minimum number of seats you will sell for a home game or is it just a measure of fan support, kind of like supporters in HT?

The second point yes the number of attendees is a meaure of fan support. This is boosted by lowering seat prices, having a higher level PR guys and most importantly winning your regular season games.
