I'm not sure that I understand what you've meant, but I guess that basically they are writing information to a file and for viewing they are reading from it.
More precisely they are probably copying to a separate file evey one minute.
Due to that (and in case they don't they can!), they can read the first file (first minute) and continue from there on and bu that give a "VOD" like game-view.

Am I right?

It is hard guessing whether it is possible or not, but it is hard for me to believe that this simple activity cannot be achieved.
But then again, I realy don't know which tools and OS they are using...

Well, anyhow we'll need to wait for their respond. Currently we are just guessing :)
