But the economy update starts sunday evening/night?! So why couldn't I set my points sunday afternoon? I had 8 Points left. Now, after the update, I have 10 Points... And I think, I can't take the 8 points in the next season, can I?

Yes, you will be able to use those points. Soon, a news post explaining all the season's changes will be published and everything will clearer then.
