I believe (I'm not sure though) it works this way.
Those matchup ratings are only an average number. So if the SG has an matchup rating of 80, he will score an average of 80 when taking 100 shots.
why do matchup ratings still differ from game to game even though its an average number? The matchup ratings show an average amount of scored points in a particular game. The rating considers offensiv flow, oppenents deffense, home court advantage etc.
lets make an exampel:
SG A convertes in this particular game 50% of his shoots => scores 100 points out of 100 shots (no three pointers to make calculation easier)
SG B convertes only 33% of his shoots => scores 66 points out of 100 shots
However there is a random factor in this game. If both of them take 4 shots per game, most often player A will score more points, thoug there is a (relatively high) chance that player B scores more points than A.
If both of them take 10 shoots, the chance of A scoring more is even higher, but in some games B will still score more.
So the more shoots they take, the more often these teams will play this way against each other, both players will tend to their own shooting percentage.
edit: now i have taken a look at your player and his stats. Sorry i dont have got a good explanation. his shooting percentage is very bad all season, his shooting skills are quit good, his driving skill is okay and his experience is okay. the only thing a can think of now, is your offensive flow. it could be better. however even considering the bad flow, the percentage is a lot worse than expected.
