My next opponent is probably going to play FCP.

How can I punish him for that?


If you have high stamina players play a fast paced offence such as look inside. Otherwise just use your best offence. Low post is perfectly fine if that's what you want.

I believe my players have high stamina. Is above 6 considered high stamina ?

I decided to play run and gun. Fast paced offense, and my opponent's perimeter defence is weaker than his inside.

Since my roster consists of some grandpas I would like to know at which point does exhaustion kicks in? Let's say at 36 min mark or 40 min mark ?

It depends on the stamina of the player, but the earliest I've seen is 37 minutes.
